  • 4 large-sized apples (peeled, cored, and chopped) Granny Smith apples
  • 2 cups (sliced into 1/2 inch pieces) fresh rhubarb
  • 2 cups (hulled and halved) fresh strawberries
  • 1/2 cup water
  • 1/4 cup honey or maple syrup
  • 1 tsp lemon juice
  • 1/2 tsp ground cinnamon

  1. Prepare the fruit by washing, peeling, and chopping the apples, rhubarb, and strawberries as specified.
  2. In a large saucepan or Dutch oven, combine the chopped apples, rhubarb, strawberries, water, and lemon juice.
  3. Place the pot over medium-high heat and bring the mixture to a gentle boil.
  4. Reduce the heat to low, cover the pot, and simmer for 20 to 25 minutes, or until the fruit is very soft and breaking down.
  5. Remove from heat and stir in the honey or maple syrup and ground cinnamon.
  6. For a chunky sauce, mash the fruit with a potato masher; for a smooth sauce, use an immersion blender until desired consistency is reached.
  7. Let the applesauce cool to room temperature before serving or storing in airtight containers in the refrigerator.

Notes

This sauce keeps well in the refrigerator for up to one week or can be frozen for up to three months.
