- Preheat your oven to 375°F (191°C). If you are using fresh broccoli, boil it for 1–2 minutes until it is bright green, then drain it thoroughly. If you are using frozen spinach, ensure it is thawed and all excess water is squeezed out.
- In a large mixing bowl, combine the cooked chicken, chopped bacon, prepared vegetables, minced garlic, ranch dressing, 1/2 cup of mozzarella, and 1/2 cup of cheddar cheese. - Spread the mixture evenly into a 9x13 inch casserole dish. You can also mix the ingredients directly in the dish to save on cleanup.
- Sprinkle the remaining 1/2 cup of mozzarella and 1/2 cup of cheddar cheese evenly over the top of the mixture.1 cup shredded mozzarella cheese, 1 cup shredded cheddar cheese
- Place the dish in the oven and bake for approximately 15 minutes, or until the cheese is melted, hot, and bubbly. Let it cool for a few minutes before serving.
Notes
Using a store-bought rotisserie chicken is a major time-saver that adds extra depth to the casserole. Ensure frozen vegetables are completely thawed and patted dry to prevent the dish from becoming runny.
