  • 1 pound ground beef or Italian sausage
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 28 ounce can crushed tomatoes
  • 15 ounce can tomato sauce
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes optional
  • 8 ounces lasagna noodles broken into small pieces
  • 1 cup heavy cream
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Method
 

  1. In a large pot or Dutch oven, brown the ground beef or sausage over medium-high heat. Drain off any excess grease.

  2. Add the chopped onion and minced garlic to the pot. Cook until softened, about 5 minutes.

  3. Stir in the crushed tomatoes, tomato sauce, beef broth, oregano, basil, and red pepper flakes (if using). Season with salt and pepper.

  4. Bring the mixture to a simmer. Add the broken lasagna noodles. Cook until the noodles are tender, about 10-12 minutes, stirring occasionally.

  5. Stir in the heavy cream to create a creamy texture.

  6. Dollop spoonfuls of ricotta cheese into the soup. Sprinkle with Parmesan cheese.
