Ingredients
  

For the Chicken
  • 1.5 lbs boneless, skinless chicken breasts
  • 1 ounce Chipotle Ranch seasoning mix packet
  • 2 tablespoons olive oil
For the Burritos
  • 4 large flour tortillas
  • 1 cup cooked rice white or brown
  • 15 ounces black beans rinsed and drained
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro
Optional
  • Avocado slices
  • Diced tomatoes
  • Shredded lettuce

Method
 

  1. In a bowl, mix the chicken breasts with chipotle ranch seasoning and olive oil. Make sure each piece is nicely coated.

  2. Preheat your grill to medium-high heat. Grill the chicken for 6-8 minutes per side, or until cooked through and no longer pink inside.

  3. Let the grilled chicken rest for 5 minutes, then dice it into small pieces.

  4. Lightly warm the flour tortillas in a dry skillet or microwave to make them pliable.

  5. Lay a tortilla flat and spread a thin layer of sour cream. Add rice, black beans, diced chicken, shredded cheese, and cilantro.

  6. Fold in the sides of the tortilla, then tightly roll it up from the bottom.
