Easy Cheesy Ground Beef Enchiladas

  • 1 pound ground beef
  • 1 medium onion chopped
  • 1 (15 ounce) can tomato sauce
  • 1 (10 ounce) can enchilada sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin

  • to taste pepper
  • 10-12 corn tortillas
  • 2 cups shredded cheddar cheese divided

Method
 

  1. In a large skillet over medium heat, cook the ground beef until browned, crumbling it as it cooks. Drain any excess grease.

  2. Add the chopped onion to the skillet with the beef and cook until softened, about 5 minutes.

  3. Stir in the tomato sauce, enchilada sauce, chili powder, cumin, salt, and pepper. Simmer for 5-10 minutes, allowing the flavors to meld.

  4. While the sauce simmers, warm the tortillas in a microwave or lightly on a skillet to make them pliable. This prevents them from cracking when rolling.

  5. Preheat oven to 350°F (175°C). Spoon a generous amount of the beef mixture into each tortilla. Sprinkle with a little cheese.
    2 cups shredded cheddar cheese
  6. Roll up the filled tortilla tightly and place it seam-side down in a 9x13 inch baking dish.
  7. Pour the remaining enchilada sauce over the rolled enchiladas. Sprinkle the remaining cheddar cheese evenly over the top.

  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the enchiladas are heated through.
