Ingredients

Ingredients
  • 1 pound ground beef
  • 2 teaspoons dried oregano divided
  • 2 teaspoons dried thyme divided
  • 6 tablespoons butter
  • 1 cup yellow onion diced
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 5 cloves garlic minced
  • 4 tablespoons flour
  • 8 cups chicken broth
  • 8 ounces elbow macaroni uncooked
  • 1 cup heavy cream
  • 8 ounces sharp cheddar cheese shredded
  • 1 teaspoon white balsamic vinegar
  • Kosher salt and fresh cracked pepper to taste

Method

Instructions
  1. Brown the ground beef in a large pot with half the oregano, thyme, salt, and pepper. Remove beef and set aside.
  2. In the same pot, melt butter and sauté onion, carrots, and celery for 10 minutes. Add garlic and remaining herbs, cooking for 1 minute.
  3. Stir in the flour to coat the vegetables and cook for 1 minute.
  4. Deglaze the pot with a splash of broth, then add the remaining broth and macaroni. Bring to a simmer and cook for 5-7 minutes until pasta is al dente.
  5. Remove from heat. Stir in heavy cream, shredded cheese, white balsamic vinegar, and the cooked ground beef. Heat through over medium heat and serve.

Notes

For best results, shred your own cheese to ensure a smooth, creamy texture. If making ahead, cook pasta separately to prevent it from absorbing all the broth.
