In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.

Bring the soup to a boil, then reduce heat and simmer for 15-20 minutes, or until the vegetables are tender.

Gradually stir in the shredded cheddar cheese until melted and the soup is creamy.

Stir in the milk or half-and-half to reach your desired consistency. Heat through, but do not boil.
