Easy Cheeseburger Soup

Ingredients
  

Beef
  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Broth & Veggies
  • 4 cups beef broth
  • 14.5 ounce can diced tomatoes undrained
  • 1 cup diced potatoes about 1 medium potato
  • 1 cup diced carrots
  • 1 cup diced celery
Creamy & Cheesy
  • 4 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk or half-and-half
Toppings (optional)
  • Cooked bacon crumbles
  • Shredded cheddar cheese
  • Diced green onions
  • Sour cream

Method
 

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.

  2. Add the chopped onion to the pot and cook until softened, about 3-5 minutes. Stir in the garlic powder, salt, and pepper.

  3. Pour in the beef broth. Add the diced tomatoes (undrained), potatoes, carrots, and celery.

  4. Bring the soup to a boil, then reduce heat and simmer for 15-20 minutes, or until the vegetables are tender.
  5. Reduce heat to low. Add the softened cream cheese and stir until melted and smooth.

  6. Gradually stir in the shredded cheddar cheese until melted and the soup is creamy.

  7. Stir in the milk or half-and-half to reach your desired consistency. Heat through, but do not boil.

  8. Ladle the Easy Cheeseburger Soup into bowls and top with your favorite cheeseburger toppings, such as cooked bacon crumbles, extra cheddar cheese, diced green onions, or a dollop of sour cream. Enjoy!
