Ingredients
  

For the Base:
  • 1 pound boneless, skinless chicken breasts cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
For the Sauce:
  • 1 can diced tomatoes 14.5 ounce, undrained
  • 1 can cannellini beans 15 ounce, rinsed and drained
  • 1 tesspoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
To Serve:
  • cooked rice, quinoa, or pasta
  • fresh parsley chopped, optional

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onions and cook until softened (about 5 minutes).
  3. Stir in the minced garlic and cook for 1 minute more.
  4. Add the chicken cubes and cook until browned on all sides.
  5. Pour in the diced tomatoes (undrained), cannellini beans, Italian seasoning, salt, and pepper.
  6. Bring to a simmer, then reduce heat and cover. Cook for 15-20 minutes, or until chicken is cooked through and the sauce has thickened slightly.
  7. Serve over cooked rice, quinoa, or pasta. Garnish with fresh parsley, if desired.

Notes

Add vegetables like bell peppers, zucchini, or spinach. Use rotisserie chicken for even faster preparation. Add red pepper flakes for spice. Serve with salad, garlic bread, or roasted vegetables for complete meal.
