Dump Go Crockpot Teriyaki Chicken

Ingredients
  

For the Chicken
  • 2 pounds boneless, skinless chicken thighs or breasts cut into 1-inch cubes
For the Teriyaki Sauce
  • 3/4 cup soy sauce low sodium preferred
  • 1/2 cup brown sugar packed
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes optional, for a little heat
For Thickening
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
For Garnish (optional)
  • sesame seeds
  • chopped green onions

Method
 

  1. In the crockpot, add the cubed chicken.
    2 pounds boneless, skinless chicken thighs or breasts
  2. In a bowl, whisk together soy sauce, brown sugar, honey, rice vinegar, sesame oil, minced garlic, and ground ginger. Add red pepper flakes if desired.
    3/4 cup soy sauce, 1/2 cup brown sugar, 1/4 cup honey, 2 tablespoons rice vinegar, 2 tablespoons sesame oil, 2 cloves garlic, 1 teaspoon ground ginger, 1/2 teaspoon red pepper flakes
  3. Pour the teriyaki sauce over the chicken in the crockpot. Stir to coat the chicken evenly.
  4. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken cooked through entirely.
  5. In a small bowl, whisk together cornstarch and cold water until smooth.

  6. Pour the cornstarch slurry into the crockpot. Stir well to combine.
  7. Turn the crockpot to high and cook for another 15-20 minutes, or until the sauce has thickened to your desired consistency.
  8. Serve the Dump Go Crockpot Teriyaki Chicken hot over rice or noodles. Garnish with sesame seeds and green onions, if desired.
