  • 1 cup pitted dates
  • 1/2 cup unsweetened applesauce
  • 1/4 cup almond butter
  • 2 tablespoons cocoa powder (unsweetened)
  • 1 teaspoon vanilla extract
  • Pinch sea salt
Optional Coating
  • shredded coconut, chopped nuts, or sprinkles for coating

Method
 

  1. Blend: In a food processor, add the pitted dates, unsweetened applesauce until dates are completely smooth.

  2. Mix: Add almond butter, sugar-free cocoa powder, vanilla extract, and salt. Blend until the mixture is smooth and well combined.

  3. Chill: Transfer the mixture to a bowl. Cover and refrigerate for at least 30 minutes to allow it to firm up.
  4. Shape: Scoop out the chilled mixture, about a tablespoon at a time. Roll into small balls.
  5. Coat: If desired, roll the candy balls in shredded coconut, chopped nuts, or sprinkles.
