- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly coat with nonstick spray.
- In a medium bowl, combine cheddar, mozzarella, chopped pickles, garlic powder, and breadcrumbs if using. Mix until well combined.
- Scoop teaspoon-sized mounds of the mixture onto the prepared baking sheet, spacing each one about an inch apart.
- Gently flatten each mound so they crisp evenly in the oven.
- Bake for 10–12 minutes, or until the edges are golden brown and bubbly.
- Let them cool on the baking sheet for a few minutes, then transfer to a wire rack to finish crisping.
- Serve warm or at room temperature for a crunchy, cheesy snack.
Notes
To avoid sogginess, ensure you pat the chopped pickles dry with a paper towel before mixing. Always use parchment paper or a silicone mat as the cheese will stick to a bare pan.
