Chicken & Coating
  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch pieces
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs (panko or regular)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Garlic Sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons chopped fresh parsley for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Cut chicken breasts into 1-inch pieces.

  2. In a bowl, mix Parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and pepper.

  3. Dip each chicken piece into the parmesan mixture, pressing firmly to coat.
    1.5 lbs boneless, skinless chicken breasts, 1/2 cup grated Parmesan cheese, 1/4 cup breadcrumbs, 1 teaspoon garlic powder, 1/2 teaspoon paprika, 1/4 teaspoon salt, 1/4 teaspoon black pepper
  4. Arrange coated chicken pieces on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil. Bake for 15-20 minutes, or until golden brown and cooked through.

  5. While the chicken is baking, heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add minced garlic and cook until fragrant (about 1 minute).

  6. Pour in chicken broth and bring to a simmer. Reduce heat and stir in heavy cream and butter. Simmer for 5 minutes, or until the sauce thickens slightly.

  7. Add the baked crispy parmesan chicken to the skillet with the garlic sauce. Toss gently to coat.
