Preheat oven to 375°F (190°C). In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned.

Stir in the taco seasoning and water. Bring to a simmer and cook until the water has evaporated and the mixture has thickened, about 5-7 minutes.

Line a baking sheet with parchment paper. Fill each taco shell with the seasoned ground beef and top with shredded cheddar cheese.

Place the baking sheet in the preheated oven and bake for 5-7 minutes, or until the cheese is melted and bubbly and the taco shells are crisp.
