Ingredients
  

For the Tortellini
  • 1 20 ounce cheese tortellini fresh or frozen
For the Shrimp
  • 1 pound large shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes optional
  • Salt and pepper to taste
For the Sauce
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 5 ounces fresh spinach roughly chopped
  • Salt and pepper to taste

Method
 

  1. Cook the tortellini according to package directions. Drain and set aside.

  2. Heat olive oil in a large skillet over medium heat. Add shrimp, garlic powder, red pepper flakes (if using), salt, and pepper. Cook for 2-3 minutes per side, or until pink and opaque. Remove from skillet and set aside.

  3. In the same skillet, melt butter over medium heat. Add garlic and cook until fragrant, about 1 minute.

  4. Whisk in flour until smooth. Gradually whisk in milk and heavy cream until combined. Bring to a simmer, stirring constantly.

  5. Reduce heat to low and stir in Parmesan cheese until melted and smooth. Add spinach and cook until wilted, about 2 minutes.

  6. Add cooked tortellini and shrimp to the sauce. Gently toss to coat.

  7. Season with salt and pepper to taste. Serve immediately, garnished with extra Parmesan cheese if desired.
