Creamy Low Carb Chicken Casserole

Ingredients
  

Chicken
  • 2 lbs boneless, skinless chicken breasts cooked and shredded
Sauce
  • 8 oz cream cheese softened
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • salt to taste
  • pepper to taste
Vegetables
  • 1 cup broccoli florets steamed
  • 1 cup cauliflower florets steamed
  • 1/2 cup chopped bell pepper (any color)
Cheese
  • 1 1/2 cups shredded cheddar cheese divided
Optional Toppings
  • 1/4 cup grated Parmesan cheese
  • Chopped fresh parsley

Method
 

  1. Preheat your oven! Set it to 375°F (190°C).
  2. Make the sauce: In a large bowl, combine the softened cream cheese, heavy cream, chicken broth, garlic powder, and onion powder. Mix well until smooth and creamy.

  3. Season to taste! Grab the salt and pepper and add to the sauce. Stir to combine.

  4. Combine ingredients: Add the shredded chicken, steamed broccoli, steamed cauliflower, and chopped bell pepper to the cream cheese mixture. Stir until everything is evenly coated.

  5. Add the cheese: Add 1cup of shredded cheddar cheese. Mix well

  6. Time to assemble: Pour the chicken and vegetable mixture into a 9x13 inch baking dish.
  7. Top it off: Sprinkle the remaining 1/2 cup of cheddar cheese evenly over the top of the casserole.

  8. Get Baking: Bake in the preheated oven for 20-25 minutes, or until the casserole is bubbly and the cheese is melted and lightly golden brown.
  9. Finishing touches (Optional): Sprinkle with grated Parmesan cheese and chopped fresh parsley.
