Ingredients
  

  • 14 oz smoked sausage cut into small slices (jalapeño cheddar sausage adds great flavor)
  • 12 oz pasta rotini is recommended for holding the sauce
  • 2 cups heavy cream
  • 1 tablespoon Cajun seasoning such as SoLa Seasoning
  • 0.5 cup Parmesan cheese grated

Method
 

  1. Cook the pasta according to the package directions in a large pot of salted water. Once finished, drain the water and set the pasta aside.

  2. Place a medium skillet over medium heat and add the sausage slices. Sauté the sausage for about 5 to 8 minutes, or until they have developed a nice golden-brown color.

  3. Pour the heavy cream into the skillet with the sausage and add the Cajun seasoning. Stir well to ensure the seasoning is fully incorporated into the cream.

  4. Reduce the heat to low and allow the mixture to simmer for approximately 4 minutes. You will notice the sauce beginning to thicken slightly.
  5. Remove the skillet from the heat and stir in the grated Parmesan cheese until the sauce is smooth.

  6. Add the cooked pasta into the skillet and toss thoroughly to ensure every piece of pasta is coated in the creamy Cajun sauce. Serve immediately.

Notes

For the best flavor, use high-quality Cajun seasoning and ensure the sausage is browned well to create a deep, smoky base. If the sauce becomes too thick, simply stir in a small splash of reserved pasta water to reach your desired consistency.
