  • 1 pound pasta (penne, rotini, or your favorite shape)
  • 1 tablespoon olive oil
  • 1 pound smoked sausage sliced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 8 ounces cream cheese softened
  • 1 cup chicken broth
  • 1/2 cup milk or heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley (optional)
  • Salt and pepper to taste

Method
 

  1. Cook the Pasta: Cook the pasta according to package directions until al dente. Drain and set aside.

  2. Sauté the Sausage: In a large skillet or pot, heat the olive oil over medium heat. Add the sliced smoked sausage and cook until browned and slightly crispy.

  3. Add Aromatics: Add the chopped onion and minced garlic to the skillet. Cook until the onion is softened and translucent, about 5 minutes.

  4. Create the Creamy Sauce: Reduce the heat to low. Add the softened cream cheese, chicken broth, and milk or heavy cream to the skillet. Stir until the cream cheese is melted and the sauce is smooth.

  5. Combine and Season: Add the cooked pasta to the skillet with the sauce. Toss to coat the pasta evenly. Stir in the Parmesan cheese and parsley (if using).

  6. Season to Taste: Season with salt and pepper to taste.
