Ingredients
  

Goat Cheese Mixture:
  • 4 ounces goat cheese softened
  • 2 ounces cream cheese softened
  • 1/4 cup dried cranberries finely chopped
  • 1/4 cup pecans finely chopped and toasted
  • 1 tablespoon honey
  • 1/4 teaspoon black pepper
Coating:
  • 1/2 cup pecans finely chopped and toasted
  • 1/4 cup dried cranberries finely chopped

Method
 

  1. Combine softened goat cheese, cream cheese, chopped cranberries, chopped pecans, honey, and black pepper in a mixing bowl.
  2. Mix on medium speed until the ingredients are blended into a smooth mixture.
  3. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the mixture to firm up.
  4. In a separate shallow dish, combine the finely chopped pecans and cranberries for the coating.
  5. Remove the goat cheese mixture from the refrigerator.
  6. Use a spoon or small cookie scoop to form small truffle sized balls.
  7. Roll each truffle in the pecan-cranberry mixture, pressing gently to coat evenly.
  8. Place the coated truffles on a serving plate.
  9. Refrigerate for at least 15 minutes before serving to allow the coating to set.
  10. Serve chilled and enjoy!
