Ingredients

For the Meatballs
  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg beaten
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste Salt and pepper
For the Cranberry Sauce
  • 1 (14-ounce) can whole berry cranberry sauce
  • 1/2 cup chili sauce
  • 1/4 cup brown sugar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup water optional, to thin sauce

Equipment

  • Large Bowl
  • Baking Sheet
  • Parchment Paper
  • Saucepan

Method

  1. Prepare the Meatballs: In a large bowl, combine ground beef, breadcrumbs, milk, egg, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  2. Mix Well: Gently mix all ingredients until just combined. Do not overmix.
  3. Form into Balls: Roll the mixture into small meatballs (about 1 inch in diameter).
  4. Bake the Meatballs: Place the meatballs on a baking sheet lined with parchment paper and bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until cooked through.
  5. Prepare the Sauce: While the meatballs are baking, in a saucepan, combine cranberry sauce, chili sauce, brown sugar, Dijon mustard, and Worcestershire sauce.
  6. Simmer the Sauce: Bring the sauce to a simmer over medium heat, stirring occasionally. If the sauce is too thick, add water to reach desired consistency.
  7. Combine and Serve: Once the meatballs are cooked, add them to the cranberry sauce. Simmer for another 5-10 minutes to allow the meatballs to absorb the sauce.
  8. Serve Hot: Serve the Cranberry Meatballs Recipe hot, garnished with fresh parsley if desired.

Notes

To avoid tough meatballs, ensure not to overmix the meat mixture. Gently combine the ingredients until just incorporated. For a richer flavor, consider browning the meatballs in a skillet before baking. This adds a delicious sear and enhances the overall taste. Experiment with different types of ground meat, such as ground turkey or chicken, for a lighter option. You can also add a pinch of red pepper flakes to the sauce for a hint of heat. If you prefer a smoother sauce, use a hand blender to puree it before adding the meatballs. Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat gently on the stovetop or in the microwave, and you can keep them warm in a crockpot for parties.
