Ingredients
  

  • 1 baguette sliced into ½-inch thick rounds
  • 2 tablespoons olive oil
  • to taste Salt and pepper
For the Topping
  • 8 ounces brie cheese rind removed and sliced
  • 4 ounces prosciutto thinly sliced
  • ½ cup cranberry sauce homemade or store-bought
  • Fresh rosemary sprigs for garnish (optional)

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Brush baguette slices with olive oil; season with salt and pepper.
  3. Arrange the crostini on a baking sheet.
  4. Bake for 8-10 minutes, or until lightly golden brown.
  5. Remove from oven and top each crostini with a slice of brie.
  6. Return to oven for 2-3 minutes, or until brie is softened and slightly melted.
  7. Top each crostini with a small slice of prosciutto and a spoonful of cranberry sauce.
  8. Garnish with fresh rosemary, if desired.
  9. Serve immediately.

Notes

Use high-quality ingredients; fresh brie and thinly sliced prosciutto make a big difference. Don't overbake the crostini, as they will become too hard; you're aiming for a light golden-brown color. To prevent the brie from spreading too much in the oven, partially freeze it (about 15 minutes) before slicing. Adjust the amount of prosciutto to your liking. Let the crostini cool slightly before adding the cranberry sauce to prevent it from melting.
