Cowboy Pasta Recipe

A quick and easy pasta dish inspired by classic Texas flavors, perfect for busy weeknights.

Ingredients
  

Pasta
  • 1 pound pasta (penne, rotini, or your favorite shape)
Sauce Base
  • 1 tablespoon olive oil
  • 1 pound ground beef or Italian sausage
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper (any color), chopped
  • 14.5 ounce can diced tomatoes undrained
  • 15 ounce can black beans rinsed and drained
  • 15 ounce can corn drained
  • 1 taco seasoning packet
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese or your favorite cheese
Optional Toppings
  • sour cream (optional)
  • avocado (optional)
  • cilantro (optional)

Method
 

  1. Cook the pasta according to package directions. Drain and set aside.

  2. While the pasta cooks, heat olive oil in a large skillet over medium heat.

  3. Add ground beef or sausage and cook, breaking it up with a spoon, until browned. Drain off any excess grease.

  4. Add onion and bell pepper to the skillet and cook until softened, about 5 minutes. Stir in garlic and cook for 1 minute more.

  5. Stir in diced tomatoes, black beans, corn, taco seasoning, and beef broth.

  6. Bring to a simmer and cook for 10 minutes, stirring occasionally, to allow the flavors to meld.
  7. Add the cooked pasta to the skillet and toss to coat.

  8. Stir in the shredded cheese until melted.
    1 cup shredded cheddar cheese
