Cook the pasta according to package directions. Drain and set aside.

While the pasta cooks, heat olive oil in a large skillet over medium heat.

Add ground beef or sausage and cook, breaking it up with a spoon, until browned. Drain off any excess grease.

Add onion and bell pepper to the skillet and cook until softened, about 5 minutes. Stir in garlic and cook for 1 minute more.

Stir in diced tomatoes, black beans, corn, taco seasoning, and beef broth.

Bring to a simmer and cook for 10 minutes, stirring occasionally, to allow the flavors to meld.
Add the cooked pasta to the skillet and toss to coat.

Stir in the shredded cheese until melted.
