Ingredients
  

Dip Base
  • 1 15-ounce can black-eyed peas drained and rinsed
  • 1 15-ounce can black beans drained and rinsed
  • 1 cup diced red bell pepper
  • 1 cup diced cucumber
  • 1/2 cup diced red onion
  • 1 jalapeno pepper seeded and finely chopped (adjust for heat)
  • 1/4 cup chopped fresh cilantro
Dressing & Seasoning
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice freshly squeezed is best
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the black-eyed peas, black beans, red bell pepper, cucumber, red onion, and jalapeno pepper.

  2. In a small bowl, whisk together the olive oil and lime juice to create the dressing.

  3. Pour the dressing over the vegetable and bean mixture and toss well to combine all ingredients.
  4. Stir in the chopped cilantro and season with salt and pepper to taste.

  5. Cover and refrigerate for at least **30 minutes** to allow the flavors to fully meld. Serve chilled.

Notes

Chilling time is essential for the best flavor. For an authentic Southern twist, you can replace the lime juice with apple cider vinegar. Add a can of drained and rinsed corn kernels for extra sweetness and crunch.
