  • 1 cup strawberries fresh, ripe, stems removed and diced
  • 1/2 cup plain Greek yogurt 2% fat or higher recommended
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 2 tsp coconut oil

  1. Line a large baking sheet with parchment paper.
  2. In a large bowl, combine the diced strawberries, plain Greek yogurt, and vanilla extract. Stir until the strawberries are well coated in the yogurt mixture.
  3. Scoop the strawberry-yogurt mixture onto the prepared baking sheet, forming clusters of about 2 tablespoons each. Leave some space between each cluster. This recipe should yield approximately 8 clusters.
  4. Transfer the baking sheet to the freezer and freeze for 30-45 minutes, or until the clusters are firm but not frozen solid.
  5. While the clusters are freezing, place the chocolate chips and coconut oil in a small, deep bowl. Microwave in 30-second intervals, stirring between each, until the chocolate is smooth and melted.
  6. Allow the melted chocolate to cool for about 5 minutes to prevent it from melting the yogurt clusters too quickly.
  7. Remove the frozen clusters from the freezer. Using a large spoon, quickly dip each cluster into the melted chocolate, ensuring it's fully coated. Place the chocolate-coated clusters back onto the parchment-lined baking sheet.
  8. Let the clusters sit at room temperature for a few minutes until the chocolate has hardened into a shell. They are then ready to enjoy!

Notes

Store these clusters in the refrigerator for up to a week in an airtight container, separated by parchment paper if layering. They can be eaten directly from the fridge. Freezing may compromise the yogurt's texture. For best results, work in batches when melting chocolate and dipping clusters to prevent the chocolate from hardening too quickly or the clusters from melting.
