Chocolate Covered Cheesecake Strawberries

Juicy strawberries enrobed in creamy cheesecake filling, all coated in rich chocolate. Quick to make and surprisingly healthier!

Ingredients
  

Cheesecake Filling
  • 8 ounces cream cheese softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
Chocolate Coating
  • 12 ounces semi-sweet chocolate chips
  • 1 tablespoon coconut oil optional, for smoother melting
Assembly
  • 1 pound fresh strawberries washed and dried thoroughly

Equipment

  • Mixing Bowl
  • Piping bag or zip-top bag
  • Double Boiler or Microwave-Safe Bowl
  • Wax Paper or Parchment Paper

Method
 

  1. In a mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract and mix until well combined and creamy.

  2. Wash the strawberries gently and pat them completely dry with paper towels. Thoroughly dried strawberries help with chocolate adhesion.

  3. Place the cheesecake filling in a piping bag or a zip-top bag with a corner snipped off. Gently insert the tip into the top of each strawberry and fill with the cheesecake mixture. You can also carefully cut a slit through the top and stuff the strawberries with the mixture, and smooth them back together with your hands.

  4. In a double boiler or microwave-safe bowl, melt the chocolate chips with coconut oil (if using) in 30 seconds intervals, stirring in between, until completely smooth.

  5. One at a time, dip each stuffed strawberry into the melted chocolate, ensuring it is fully coated.

  6. Place the chocolate-covered strawberries on wax paper or parchment paper. If desired, sprinkle immediately with sea salt, sprinkles, or crushed nuts. Put the parchment paper in the fridge.

  7. Refrigerate the strawberries for at least 30 minutes to allow the chocolate to set completely. Serve cold and enjoy!
