Ingredients
  

  • 1 pound Chicken Sausage any flavor, sweet Italian, spicy, etc.
  • 1 tablespoon Olive Oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 Bell Pepper any color, chopped
  • 1 can Diced Tomatoes 14.5 oz, undrained
  • 1 can Cannellini Beans 15 oz, rinsed and drained
  • 1 teaspoon Dried Oregano
  • 1/2 teaspoon Red Pepper Flakes optional
  • to taste Salt
  • to taste Pepper
  • Fresh Parsley chopped, for garnish

Method
 

  1. Slice the chicken sausage into bite-sized pieces.
    1 pound Chicken Sausage
  2. Heat the olive oil in a large skillet over medium heat. Add the sausage and cook until browned.

  3. Add the onion and bell pepper to the skillet and cook until softened, about 5 minutes. Stir in the garlic and cook for 1 minute more.
    1 medium Onion, 1 Bell Pepper, 2 cloves Garlic
  4. Pour in the diced tomatoes (undrained) and add the cannellini beans, oregano, and red pepper flakes (if using). Season with salt and pepper.

  5. Bring the mixture to a simmer and cook for 10-15 minutes, or until the flavors have melded.
  6. Garnish with fresh parsley and serve hot. Enjoy!
