Ingredients
  

For the Chicken:
  • 1 pound boneless, skinless chicken breasts cut into 1-inch cubes
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon garlic powder
For the Stir Fry:
  • 2 packages chicken flavor ramen noodles 3 ounces each, seasoning packets discarded
  • 1 tablespoon vegetable oil
  • 1 cup broccoli florets
  • 1/2 cup sliced carrots
  • 1/2 cup sliced bell pepper any color
  • 1/4 cup sliced green onions
  • 2 cloves garlic minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce optional, for a richer flavor
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon sesame oil
  • Sesame seeds for garnish (optional)

Method
 

  1. Marinate the Chicken: In a medium bowl, combine the chicken cubes, 1 tablespoon soy sauce, 1 teaspoon sesame oil, ginger, and garlic powder. Mix well and let it marinate for at least 15 minutes (or longer for more flavor).

  2. Cook the Ramen: Cook the ramen noodles according to package directions, just until al dente. Drain well and set aside.

  3. Stir Fry the Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir fry until cooked through and lightly browned (about 5-7 minutes). Remove the chicken from the skillet and set aside.

  4. Stir Fry the Vegetables: Add the broccoli florets, carrots, and bell pepper to the skillet. Stir fry for 3-5 minutes, until tender-crisp. Add the minced garlic and green onions, and cook for another minute until fragrant.

  5. Combine Everything: Add the cooked chicken and ramen noodles to the skillet with the vegetables.

  6. Add the Sauce: Pour in the remaining 1 tablespoon soy sauce, oyster sauce (if using), rice vinegar, and 1/2 teaspoon sesame oil. Toss everything together until well combined, and the noodles are heated through.
