  • 1 large egg beaten
  • 1 cup panko breadcrumbs

  • 24 oz marinara sauce
  • 1/2 cup shredded mozzarella cheese

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking sheet.
  2. Prepare the chicken: Place each chicken breast between two sheets of plastic wrap. Gently pound with a meat mallet until about 1/2-inch thick.
  3. Create the breading station: In a shallow dish, combine flour, Italian seasoning, garlic powder, salt, and pepper. In another shallow dish, place the beaten egg. In a third shallow dish, combine panko breadcrumbs and Parmesan cheese.
  4. Bread the chicken: Dredge each chicken breast in the flour mixture, then dip in the egg, and finally coat evenly with the panko breadcrumb mixture.
  5. Cook the chicken: Heat olive oil in a large skillet over medium heat. Add the breaded chicken breasts and cook for 3-4 minutes per side, or until golden brown.
