Ingredients
  

Chicken
  • 1.5 lbs boneless, skinless chicken breasts cut into bite-sized pieces
Vegetables
  • 1 large onion sliced
  • 2 bell peppers any colors, sliced
  • 1 (15 ounce) can corn drained
  • 1 (15 ounce) can black beans rinsed and drained
Cheese
  • 2 cups shredded Mexican cheese blend
Sauce
  • 1 (10 ounce) can diced tomatoes and green chiles (like Rotel) undrained
  • 1 packet fajita seasoning
Toppings (Optional)
  • Sour cream
  • Guacamole
  • Salsa
  • Cilantro chopped

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. In a large skillet over medium-high heat, cook the chicken until browned and cooked through. Drain any excess liquid.

  3. Add the sliced onions and bell peppers to the skillet with the chicken. Cook until tender, about 5-7 minutes.

  4. Stir in the drained corn, black beans, diced tomatoes and green chiles (Rotel), and fajita seasoning. Mix well.

  5. Pour the chicken and vegetable mixture into the prepared baking dish.
  6. Top evenly with the shredded Mexican cheese blend.

  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Let cool for a few minutes before serving. Top with sour cream, guacamole, salsa, and cilantro, if desired. Enjoy your delicious and easy Chicken Fajita Casserole!
