Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
In a large skillet over medium-high heat, cook the chicken until browned and cooked through. Drain any excess liquid.

Add the sliced onions and bell peppers to the skillet with the chicken. Cook until tender, about 5-7 minutes.

Pour the chicken and vegetable mixture into the prepared baking dish.
Top evenly with the shredded Mexican cheese blend.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
