Ingredients
  

  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 8 ounces Chow Mein noodles
  • 2 tablespoons vegetable oil
  • 1 onion thinly sliced
  • 2 cloves garlic minced
  • 1 cup shredded cabbage
  • 1 cup sliced carrots
  • 1/2 cup sliced celery
  • 1/2 cup sliced green onions
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce (optional)
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon ground ginger

Method
 

  1. In a bowl, combine chicken, 1 tablespoon soy sauce, and cornstarch. Mix well and set aside.
  2. Cook Chow Mein noodles according to package directions. Drain and set aside.
  3. Heat vegetable oil in a large wok or skillet over medium-high heat.
  4. Add chicken and stir-fry until cooked through and lightly browned. Remove chicken from the skillet and set aside.
  5. Add onion and garlic to the skillet and stir-fry until fragrant.
  6. Add cabbage, carrots, and celery to the skillet and stir-fry until slightly tender.
  7. Return chicken to the skillet.
  8. Add cooked noodles, remaining soy sauce, oyster sauce (if using), sesame oil, sugar, and ground ginger. Toss to combine.
  9. Season with salt and pepper to taste.
  10. Garnish with green onions and serve immediately.

Notes

Prep your ingredients beforehand. Marinating the chicken for at least 15 minutes will tenderize it and infuse it with flavor. Don't overcrowd the pan when stir-frying; cook the chicken in batches if necessary. When stir-frying the vegetables, maintain high heat and stir constantly. Adjust the sauce ingredients to your preference; add a dash of chili flakes for heat or a squeeze of lemon juice for brightness. Always taste and adjust seasonings before serving.
