Ingredients
  

Chicken Avocado Salad
  • 2 cups shredded chicken cooked
  • 1 ripe avocado mashed
  • 2-4 tablespoons plain Greek yogurt start with 2 and add more if needed
  • 1.5-2 tablespoons lime juice
  • 2 tablespoons red onion finely diced
  • 2 green onion sliced
  • 1/4 teaspoon salt or to taste
  • to taste freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1.5 tablespoons fresh cilantro chopped, or parsley
  • 1/2 cup shredded Cheddar cheese optional
For Rolling
  • 5-6 tortillas 8 or 10 inch diameter

Method
 

Instructions
  1. In a large bowl, combine the shredded chicken, mashed avocado, Greek yogurt, lime juice, diced red onion, sliced green onion, salt, pepper, garlic powder, and chopped cilantro (or parsley).
  2. If using, stir in the shredded Cheddar cheese.
  3. Mix all ingredients until evenly blended. Adjust seasoning to your taste.
  4. Lay a tortilla flat. Spread a portion of the chicken avocado mixture evenly over the surface, leaving a small border.
  5. Roll up the tortilla tightly.
  6. Repeat with the remaining tortillas and filling.
  7. Slice the rolled tortillas into 1/2 inch thick pieces using a serrated knife. For easier slicing, you can chill the rolled tortillas in the refrigerator for about 30 minutes before cutting.
  8. Serve immediately or chill until ready to serve.

Notes

These roll-ups can be made ahead and stored in the refrigerator. They also freeze well if wrapped tightly. Use leftover cooked chicken or rotisserie chicken for convenience.
