  • 1 small red onion thinly sliced

  1. Prepare the Chicken: Season the chicken breasts generously with salt and pepper on both sides. Heat one tablespoon of olive oil in a skillet over medium-high heat. Cook the chicken breasts for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from the skillet and let the meat rest for a few minutes before slicing it thinly.

  2. Prepare the Avocado and Cheese: While the chicken rests, slice your avocado and prepare your cheese slices so they are ready for assembly.

  3. Prepare the Bread: Lay out your bread slices and spread a thin layer of mayonnaise and Dijon mustard on one side of each slice.
