Cherry Chocolate Kisses

Ingredients
  

Cherry Filling
  • 1 cup pitted cherries, fresh or frozen
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon lemon juice
Chocolate Coating
  • 1 cup dark chocolate chips (70% cocoa or higher)
  • 1 tablespoon coconut oil optional, for a smoother finish
  • Pinch sea salt

Equipment

  • Small Saucepan
  • Heatproof Bowl
  • Double Boiler (or pot and bowl)
  • Parchment-lined baking sheet

Method
 

  1. In a small saucepan, combine the cherries, honey, and lemon juice.
    1 cup pitted cherries, fresh or frozen, 2 tablespoons honey or maple syrup, 1 teaspoon lemon juice
  2. Cook over medium heat, stirring occasionally, until the cherries soften and the mixture thickens (about 8-10 minutes).
  3. Remove from heat and let the cherry mixture cool completely.
  4. Place the dark chocolate chips and coconut oil (if using) in a heatproof bowl set over a simmering pot of water (double boiler).

  5. Stir the chocolate mixture until the chocolate is fully melted and smooth.
  6. Drop small spoonfuls of the cherry filling onto a parchment-lined baking sheet. Let it chill for 10 minutes. Dip each cherry filling bite into the melted chocolate, ensuring it's fully coated.

  7. Place the chocolate-covered cherries back on the parchment paper. Sprinkle with a pinch of sea salt.
