Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup cooked rice (white or brown)
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes and green chilies (like Rotel), undrained
  • 1 cup shredded cheddar cheese
Optional Toppings:
  • sour cream
  • salsa
  • avocado

Method
 

  1. In a large skillet, brown the ground beef over medium-high heat. Drain any excess grease.

  2. Stir in the taco seasoning and cook according to package directions.

  3. Add the cooked rice, black beans, corn, and diced tomatoes and green chilies to the skillet. Mix well.
    1 cup cooked rice (white or brown), 1 (15 ounce) can black beans, rinsed and drained, 1 (15 ounce) can corn, drained, 1 (10 ounce) can diced tomatoes and green chilies (like Rotel), undrained
  4. Simmer for about 5 minutes, stirring occasionally, until heated through.
  5. Sprinkle the shredded cheddar cheese over the top of the mixture.
    1 cup shredded cheddar cheese
  6. Cover the skillet and cook until the cheese is melted, about 2-3 minutes.
  7. Serve immediately, topped with your favorite taco toppings.
