Method
 

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the cubed potatoes with olive oil, salt, and pepper.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast for 20 minutes.
  5. While the potatoes are roasting, sauté the sliced smoked sausage and chopped onion in a skillet until the sausage is browned and the onion is softened.
  6. Remove the potatoes from the oven and transfer them to a large oven-safe dish.
  7. Mix in the sautéed sausage and onion.
  8. To make the cheese sauce, melt the butter in a saucepan over medium heat.
  9. Whisk in the flour and cook for 1 minute.
  10. Gradually whisk in the milk until smooth.
  11. Bring to a simmer, stirring constantly, until the sauce thickens.
  12. Remove from heat and stir in the cheddar cheese and ranch dressing mix until the cheese is melted.
  13. Pour the cheese sauce over the potatoes and sausage.
