- In a medium-sized mixing bowl, whisk together the large eggs, heavy cream, and Old Bay seasoning. Add a pinch of salt and pepper to taste and set the mixture aside.4 large eggs, 1.5 tablespoons heavy cream or milk, 1 1/2 teaspoons Old Bay seasoning, Salt and pepper
- Place a large frying pan over medium-high heat and add the oil or clarified butter. Once hot, add the chopped cooked potatoes and sauté them until they are golden brown and crispy on all sides.1.5 tablespoons frying oil or clarified butter, 4 cups chopped cooked potatoes
- Add the cubed ham to the pan with the potatoes and toss briefly to warm through.2 oz ham
- Reduce the heat to low and pour the egg mixture into the pan. Cook briefly, stirring gently, until the eggs are only partially cooked. It is important that they are not fully set at this stage to avoid a dry texture. Season again with a little salt and pepper if desired.
- Sprinkle the shredded cheese evenly over the top of the egg and potato mixture. Cover the pan with a lid and continue to cook over low heat until the cheese is completely melted and the eggs are just set.1 cup shredded cheese

Notes
Ensure your potatoes are already cooked before hitting the pan, as using raw potatoes will significantly increase the cook time. For the best texture, use heavy cream to make the eggs delicate and velvety.
