  • 2 1/2 pounds Vidalia onions
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon garlic salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup salted butter
  • 4 ounces mild cheddar cheese
  • 4 ounces smoked Gouda

  1. Preheat oven to 350°F. Coat a 9x13-inch baking dish with cooking spray.
  2. In a shallow bowl, combine the thyme, dried parsley, garlic salt, dried oregano, cayenne, and dry mustard.
  3. Arrange half of the sliced onions evenly in the prepared baking dish to cover the base.
  4. Sprinkle with half of the combined spices, then arrange half of the butter pieces and half of the shredded cheeses on top.
  5. Repeat the process with the remaining onions, spices, butter, and cheeses to create a second layer.
  6. Cover the dish with aluminum foil and bake for 40 minutes until the onions are soft and the sides are bubbly.
  7. Remove the foil and continue baking for 15 to 30 minutes until the top is golden brown and crispy.

Notes

Use a mandoline slicer for uniform 1/2-inch slices. For a crunchy top, sprinkle breadcrumbs over the cheese before the final bake. You can also substitute cheeses with a mix of Mozzarella, Sharp Cheddar, and Parmesan.
