Ingredients
  

  • 1 box Red Lobster Cheddar Bay Biscuit Mix including the seasoning packet
  • 3/4 cup milk can be substituted with water
  • 1 lb ground beef lean ground beef is recommended
  • 1 cup onion diced (about 1/2 of a large onion)
  • 1 red bell pepper diced
  • 1/4 cup water
  • 1 packet taco seasoning
  • 1 cup colby jack cheese shredded
  • 2 cups cheddar cheese shredded
  • 1 can RO*TEL diced tomatoes with green chilis do not drain
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream

Method
 

  1. Preheat your oven to 350 degrees F. Lightly spray a 9 x 13-inch casserole dish with non-stick cooking spray to prevent sticking.
  2. In a medium bowl, stir together the biscuit mix, the enclosed seasoning packet from the box, and the milk. Mix until just combined.

  3. Spread the biscuit mixture into the bottom of the prepared casserole dish in an even layer. Bake the crust alone for 5 minutes.
  4. While the crust is in the oven, brown the ground beef in a large skillet over medium heat, breaking it up as it cooks. Drain off any excess grease.

  5. Add the diced onion and red bell pepper to the skillet with the beef. Cook for an additional 1-2 minutes until slightly softened.

  6. Stir in 1/4 cup of water and the taco seasoning packet. Mix well to ensure the beef is evenly coated.

  7. Spread the seasoned ground beef mixture over the pre-baked biscuit bottom. Pour the entire can of RO*TEL (with its juices) evenly over the beef layer.

  8. In a separate bowl, stir together the sour cream, mayonnaise, and shredded colby jack cheese. Spread this mixture carefully over the tomatoes.

  9. Top the entire casserole with the shredded cheddar cheese. Place in the oven and bake for 30 minutes.

  10. Remove from the oven and let the casserole cool for at least 10 minutes before cutting and serving. This helps the layers set.

Notes

For best results, shred your own cheese to avoid anti-caking agents that prevent smooth melting. Be sure to let the casserole rest for 10 minutes after baking to allow the creamy layer to firm up properly.
