Ingredients

  • 1 tablespoon oil
  • 1 tablespoon butter
  • 1 onion finely chopped
  • 1 rib celery finely chopped
  • 0.5 green bell pepper finely chopped
  • 1 lb ground chicken
  • 3 tablespoons Cajun seasoning
  • 3 cloves garlic minced
  • 0.5 cup crushed tomatoes
  • 0.5 tablespoon brown sugar
  • 0.5 teaspoon hot sauce optional
  • 0.5 cup heavy cream
  • 0.25 teaspoon salt to taste
  • 4 burger rolls

Equipment

  • Large Skillet
  • Spatula

Method

  1. Melt the oil and butter in a large skillet over medium-low heat. Add the chopped onion, celery, and green bell pepper. Cook for 7-8 minutes until the vegetables have softened and cooked down.
1 tablespoon oil, 1 tablespoon butter, 1 onion, 1 rib celery, 0.5 green bell pepper
  2. Add the ground chicken to the skillet. Use your spatula to break the meat apart as it cooks. Allow it about 5 minutes to change color and brown slightly.
    1 lb ground chicken
  3. Sprinkle the Cajun seasoning evenly over the chicken and add the minced garlic. Cook for about one minute, being careful not to let the garlic burn or change color significantly.
3 tablespoons Cajun seasoning, 3 cloves garlic
  4. Stir in the crushed tomatoes, brown sugar, hot sauce (if using), and heavy cream. Mix well to combine all ingredients, then reduce the heat to low.
0.5 cup crushed tomatoes, 0.5 tablespoon brown sugar, 0.5 teaspoon hot sauce, 0.5 cup heavy cream
  5. Cook the mixture for 15 minutes, stirring frequently to ensure the sauce does not catch on the bottom of the skillet. Adjust the simmering time based on how "wet" or "dry" you prefer your sloppy joes.
  6. Taste the mixture and add salt as needed. The amount of salt required will depend on the salt content of your specific Cajun seasoning blend.
    0.25 teaspoon salt
  7. Toast your burger rolls and pile the Cajun chicken mixture high on the bottom buns. Serve immediately.
    4 burger rolls

Notes

Cook the onion, celery, and bell pepper slowly over low heat to ensure they soften and meld perfectly into the sauce. Sprinkle spices evenly over the meat and have crushed tomatoes ready before adding garlic to prevent burning.
