Cajun Chicken Pasta Recipe

Tender chicken and al dente pasta coated in a creamy, subtly spicy Cajun sauce.

Ingredients
  

For the Chicken
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
For the Pasta
  • 1 pound pasta (penne, fettuccine, or your favorite)
  • 8 ounces cream cheese softened
  • 1 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped green onions
  • 1 red bell pepper diced
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. In a bowl, toss the chicken pieces with Cajun seasoning until evenly coated.

  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.

  3. While the chicken cooks, cook pasta according to package directions. Drain well.

  4. In the same skillet, reduce heat to medium and add cream cheese and milk. Stir until smooth and creamy.

  5. Add Parmesan cheese, green onions, diced red bell pepper and garlic powder. Stir until well combined. Season with salt and pepper to taste.

  6. Add the cooked chicken and drained pasta to the sauce. Toss to coat evenly.
