Ingredients
  

For the Dough:
  • 1 ½ cups warm water (105-115°F)
  • 1 tablespoon sugar
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • 4 ½ cups all-purpose flour
  • 2 tablespoons unsalted butter melted
  • 1 ½ teaspoons salt
For the Boiling Solution:
  • 8 cups water
  • cup baking soda
For the Topping:
  • ¼ cup unsalted butter melted
  • To taste Coarse sea salt for sprinkling

Method
 

  1. Activate Yeast: In a large bowl, mix warm water and sugar. Sprinkle yeast over the top and let sit for 5-10 minutes until foamy.
  2. Combine Ingredients: Add flour, melted butter, and salt to the yeast mixture.
  3. Knead the Dough: Knead the dough for 5-7 minutes until smooth and elastic (either by hand or with a dough hook on a stand mixer).
  4. Let it Rise: Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.
  5. Prepare Boiling Water: Preheat oven to 450°F (232°C). Bring 8 cups of water to a boil in a large pot and carefully add baking soda.
  6. Shape Pretzel Bites: Punch down the dough and divide it into even portions. Roll each portion into ropes and cut into 1-inch pieces.
  7. Boil the Bites: Drop the pretzel bites into the boiling water in batches for 30 seconds each.
  8. Bake the Bites: Use a slotted spoon to remove the bites and place them on a parchment-lined baking sheet.
  9. Add Salt and Butter: Brush the bites with melted butter and sprinkle with coarse sea salt.
  10. Bake to Golden Brown: Bake for 12-15 minutes, or until golden brown.
  11. Serve Immediately: Serve warm with your favorite dipping sauces like cheese sauce, mustard, or sweet glaze.

Notes

Ensure your water is warm, not hot, to activate the yeast properly. A smooth, elastic dough texture is essential. The boiling process is crucial for the signature chewy texture and dark color. Don’t skip the baking soda bath. Use a light hand when brushing with butter and sprinkling with salt. Freshly baked is always best. Space the pretzels out on the baking sheet.
