Ingredients
  

For the Bruschetta Topping
  • 4 medium Roma tomatoes cored and diced small
  • 1/4 cup Fresh basil leaves chopped
  • 1 clove Garlic minced
  • 1 tablespoon Extra virgin olive oil
  • 1-2 teaspoons Balsamic vinegar to taste
  • pinch Salt to taste
For the Cheese Mixture
  • 8 oz Feta cheese block crumbled
  • 4 oz Cream cheese softened
  • 1/2 cup Sour cream
  • 1 clove Garlic minced
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 tablespoon Olive oil
  • pinch Salt to taste, be cautious as feta is salty
For Garnishing
  • 2 tablespoons Fresh basil leaves chopped
  • 1/4 teaspoon Red pepper flakes optional, to taste
  • 2 tablespoons Parmesan cheese freshly grated

Method
 

Instructions
  1. Prepare the Bruschetta Topping: In a medium bowl, combine the diced Roma tomatoes, chopped basil, minced garlic, 1 tablespoon of extra virgin olive oil, and balsamic vinegar. Sprinkle with a pinch of salt. Toss gently to combine and let marinate for at least 10 minutes.
  2. Prepare the Cheese Mixture: While the bruschetta is marinating, combine the crumbled feta cheese, softened cream cheese, sour cream, minced garlic, lemon juice, and 1 tablespoon of olive oil in a food processor.
  3. Process the cheese mixture for 3-4 minutes, scraping down the sides as needed, until smooth and creamy. Taste and add a pinch of salt if necessary, being mindful of the feta's saltiness.
  4. Assemble the Dip: Spread the smooth cheese mixture evenly into a shallow serving dish.
  5. Spoon the marinated bruschetta topping evenly over the cheese mixture.
  6. Garnish the dip with the additional chopped fresh basil, red pepper flakes (if using), and freshly grated Parmesan cheese.
  7. Serve immediately with crackers, baguette slices, or pita chips.

Notes

This dip is best served fresh. For variations, consider using goat cheese or ricotta instead of feta for a milder flavor. Other herbs like oregano or parsley can be added to the bruschetta mixture.
