Ingredients
  

For the Bruschetta Dip:
  • 2 cups Roma tomatoes diced
  • 0.5 cup fresh basil chopped
  • 2 cloves garlic minced
  • 0.25 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 0.25 teaspoon salt
  • 0.125 teaspoon black pepper
For Serving:
  • 1 package cream cheese 8 ounce, softened
  • baguette slices toasted or crackers

Method
 

  1. In a medium bowl, combine the diced tomatoes, chopped basil, minced garlic, olive oil, balsamic vinegar, salt, and pepper. Mix well.
  2. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  3. Spread the softened cream cheese evenly on a serving platter.
  4. Spoon the Bruschetta mixture over the cream cheese.
  5. Serve immediately with toasted baguette slices or crackers.

Notes

Use ripe Roma tomatoes for best flavor and texture. Don't skip the refrigeration step as it allows flavors to meld. Experiment with different balsamic vinegars or add red pepper flakes for extra kick. Also great with pita chips, pretzel crisps, or vegetable sticks.
