Ingredients

Pumpkin Filling
  • 15 oz pumpkin puree not pumpkin pie filling
  • 1 cup evaporated milk
  • 1 cup granulated sugar
  • 2 large eggs lightly beaten
  • 2 tsp pumpkin pie spice
Pecan Topping
  • 1 box yellow cake mix dry
  • 1 cup pecans chopped
  • 0.75 cup unsalted butter melted

Method

Instructions
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.
  2. In a large mixing bowl, whisk together the pumpkin puree, evaporated milk, sugar, eggs, and pumpkin pie spice until smooth.
  3. Pour the pumpkin mixture evenly into the prepared baking dish.
  4. Sprinkle the dry yellow cake mix evenly over the top of the pumpkin layer, ensuring full coverage.
  5. Scatter the chopped pecans over the cake mix layer.
  6. Drizzle the melted butter evenly over the pecans and cake mix, trying to cover as much dry mix as possible.
  7. Bake for 45-50 minutes, or until the top is golden brown and the center is set.
  8. Allow to cool for 10 minutes before serving warm, ideally with a scoop of vanilla ice cream.

Notes

For an extra crunch, toast the pecans in a dry skillet for 3 minutes before adding them to the topping.
