Ingredients
  

For the Feta
  • 8 ounces feta cheese block
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes optional
For the Topping
  • 1 cup cherry tomatoes halved
  • 1/4 cup Kalamata olives pitted and halved
  • 2 tablespoons fresh basil chopped
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Place the feta block in an oven-safe dish.
  3. In a small bowl, mix olive oil, minced garlic, oregano, and red pepper flakes (if using).
  4. Pour the mixture over the feta, ensuring it's evenly coated.
  5. Scatter the halved cherry tomatoes and olives around the feta.
  6. Season with salt and pepper.
  7. Bake for 15-20 minutes, or until the feta is softened and the tomatoes are blistered.
  8. Garnish with fresh basil and serve hot.

Notes

For a truly authentic flavor, use a block of Greek feta cheese. Pre-crumbled feta often contains cellulose, which can affect its melting properties. Don’t overcrowd the baking dish; make sure the tomatoes and olives have enough space to roast properly and release their juices. Adjust the baking time depending on your oven; you want the feta to be soft and slightly browned, but not melted completely. Feel free to customize the flavor profile by adding other vegetables like bell peppers or zucchini; a drizzle of honey after baking can also add a delicious touch of sweetness. Finally, allowing the baked feta to rest for a couple of minutes before serving allows the flavours to meld even more, enhancing the overall taste experience.
