Ingredients
  

  • 4 slices Sourdough Bread thick-sliced recommended
  • 1 round Brie Cheese approx. 5oz, sliced
  • Sharp Cheddar Cheese grated
  • 1 Honeycrisp Apple thinly sliced
  • Butter for frying
  • Honey Garlic Mustard or Apple Butter for spreading
  • Fresh Thyme leaves only

Method
 

  1. Lay your slices of sourdough on a clean cutting board. Spread butter generously on the outer sides of the slices and spread your mustard or apple butter on the inside.

  2. On two of the slices, add a layer of grated cheddar cheese followed by slices of brie cheese. Place the thinly sliced apples over the cheese and sprinkle with fresh thyme leaves. Top with the remaining bread slices.

  3. Place a large skillet or stainless steel pan over medium-high heat. Once hot, add the sandwiches to the pan. It is often easier to cook one sandwich at a time to ensure you have enough room to flip them.
  4. Cook for 3 to 5 minutes on each side. Use a spatula to press the grilled cheese down firmly as it cooks, which helps the cheese melt and binds the ingredients together.
  5. Once the bread is golden brown and the cheese is visibly melting, remove from the heat. Slice the sandwiches in half and serve immediately while hot.

Notes

For the best flavor and texture, do not remove the rind from the brie before assembling the sandwich. If the bread browns too quickly, lower the heat and cover the pan briefly to help the cheese melt.
