- Preheat: Set your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Combine Dry Ingredients: In a large bowl, mix together almond flour, baking soda, and salt. Just stir until combined.2 cups Almond Flour, 1/2 tsp Baking Soda, 1/4 tsp Salt
- Mix Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, maple syrup, almond extract, and egg until smooth.1/2 cup Coconut Oil, 1/2 cup Maple Syrup, 1 tsp Almond Extract, 1 large Egg
- Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Add Cherries and Almonds: Gently fold in the chopped dried cherries and sliced almonds.1/2 cup Dried Cherries, 1/4 cup Sliced Almonds
- Scoop and Shape: Scoop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between each cookie. Slightly flatten each cookie.
- Top with Almonds: Press a few sliced almonds onto the top of each cookie.1/4 cup Sliced Almonds
- Bake: Bake for 12-15 minutes, or until the edges are golden brown.
- Cool: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
