Method
- Preheat your grill or skillet to medium-high heat.
- Prepare the chicken: In a small bowl, combine olive oil, salt, pepper, garlic powder, and paprika. Rub this mixture all over the chicken breasts.
- Cook the chicken: Grill or pan-fry the chicken for 5-7 minutes per side, or until cooked through with an internal temperature of 165°F (74°C).
- Add the toppings: Brush the cooked chicken with honey mustard dressing. Top with crumbled bacon, mushrooms and shredded cheddar cheese.
- Melt the cheese: Cover the grill or pan, or place under a broiler, until the cheese is melted and bubbly. This should only take a minute or two.
- Garnish and serve: Sprinkle with chopped green onions (if using) and serve immediately.
Notes
For the most tender Alice Springs Chicken, don't overcook it! Use a meat thermometer to ensure it reaches 165°F (74°C). Choose a good quality honey mustard dressing – the flavor really makes a difference. Feel free to swap cheddar for your favorite cheese, like Monterey Jack or a blend of Mexican cheeses. Also, consider marinating the chicken in honey mustard and herbs for 30 minutes before cooking for an even more intense flavor. If you do not have time for the grill, bake the chicken in the oven for 20 minutes at 375 degrees. Adjust the amount of honey mustard based on your preferences; some people love it extra saucy! Most importantly, experiment to create a Alice Springs Chicken that your family loves!
