Ingredients

Filling
  • 2 large Granny Smith apples peeled and finely diced
  • 1/4 cup brown sugar packed
  • 1 tsp ground cinnamon
  • 1/2 tsp vanilla extract
Assembly
  • 8 small flour tortillas fajita size
  • 2 tbsp unsalted butter melted
  • 1 tbsp granulated sugar mixed with 1/2 tsp cinnamon for topping

Method

Instructions
  1. In a medium bowl, combine the diced apples, brown sugar, cinnamon, and vanilla extract. Toss until the apples are evenly coated.
  2. Place the apple mixture in a small saucepan over medium heat. Cook for 5-7 minutes until the apples are slightly softened. Remove from heat and let cool slightly.
  3. Lay out the tortillas and place a spoonful of the apple mixture in the center of each. Roll the tortillas tightly into taquito shapes and secure with a toothpick if necessary.
  4. Brush the outside of each taquito lightly with the melted butter.
  5. Place the taquitos in the air fryer basket in a single layer. Air fry at 375°F (190°C) for 6-8 minutes, flipping halfway through, until golden brown and crispy.
  6. Remove from the air fryer and immediately sprinkle with the cinnamon-sugar mixture while still warm. Serve with caramel sauce or vanilla ice cream.

Notes

For best results, ensure the apple pieces are diced very small so they cook through quickly and don't tear the tortillas.
