Ingredients

  • 1 stick salted or unsalted butter
  • 2 cans sliced peaches in syrup 15.25-ounce each, divided
  • 1 box yellow or white cake mix 15.5-ounce

Equipment

  • 9x13-inch Baking Dish

Method

  1. Preheat your oven to 350°F. Place the stick of butter in a 9x13-inch baking dish.
1 stick salted or unsalted butter
  2. Once the oven is preheated, transfer the dish to the oven and melt the butter, which should take about 5 minutes. Carefully remove the hot dish from the oven.
  3. Add one can of peaches with their juice directly to the melted butter in the baking dish.
2 cans sliced peaches in syrup
  4. Sprinkle the entire box of dry cake mix evenly over the peaches and butter.
1 box yellow or white cake mix
  5. Use a spoon to gently and roughly stir the mixture in the dish. The goal is not a smooth batter but a craggy, uneven texture.
  6. Pour the second can of peaches and their juice over the top of the cake mixture. You can lightly arrange the peach slices if you like.
2 cans sliced peaches in syrup
  7. Bake for 25 to 28 minutes, until the cake topping appears mostly dry and the edges are browned and crisp.
  8. Let the cobbler cool for 5 minutes before serving warm.

Notes

For the best texture, do not overmix the cake batter. A craggy, uneven mix creates a wonderful contrast of soft cake and crisp edges. A sprinkle of cinnamon or nutmeg added with the cake mix is a delicious easy tweak.
